Easy Sun-Dried Tomato and Olive Tapenade
Yields: 4 servings
Prep Time: 10 minutes
Fresh herbs are necessary for the best flavor. Do not use dried herbs.
Ingredients
- 1 cup hydrated, chopped sun-dried tomatoes
- 1/3 cup chopped Kalamata olives (don’t use regular black olives because they are not salty enough)
- 1/2 cup chopped fresh basil
- 1/2 cup chopped fresh parsley
- 1/3 cup grated Parmesan cheese (freshly grated, not the bottled stuff)
- 1/2 cup Olive oil
- 1 tablespoons balsamic vinegar
- 1 clove garlic, chopped
Directions
In a large bowl, combine the hydrated sundried tomatoes, black olives, fresh basil, fresh parsley and grated Parmesan cheese.
Add in the olive oil, balsamic vinegar and chopped garlic over the mixture.
Carefully fold all ingredients together.
While this tapenade can be served immediately, it is better if you allow it so sit for an hour or so to let the flavors blend together. It should be served at room temperature.
We garnished our dip with extra cheese, herbs and olives for presentation.
To Store: Put this dip in an air-tight container in the refrigerator for up to 4 days. Allow to come to room temperature before serving.
