Avocado Cilantro Lime Sauce
Prep time: 10 minutes
Ingredients
- 1/3 cup Greek yogurt
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- 3 tablespoons water (add as needed for consistency)
- 1 large avocado or 2 small avocados, ripe
- Handful of fresh cilantro
- 1 garlic clove
- Salt and pepper to taste

Directions
In a blender or food processor, add all ingredients.

Blend until smooth and creamy.
Gradually add water, one tablespoon at a time, until you reach the desired consistency. For a thicker dip use less water; for a thinner sauce add more water.
Blend again.

Put the dip in the refrigerator for at least 15-20 minutes to allow the flavors to blend together.
Serve either cold or at room temperature.

How to Store: Store any leftovers in an airtight container in the refrigerator for up to 2 days. Place a layer of plastic wrap directly on the surface of the dip to minimize browning.
Variations
Want some spice in this dipping sauce? Add 1 chopped jalapeño or a pinch of chili flakes before blending the ingredients together!

- Be sure the avocados that you choose are ripe! They should be soft and yield slightly to squeezing, but not too soft and mushy!
- Greek yogurt really is the key to this recipe for its thickness and tanginess. You can use a thinner type of yogurt, but you will probably need to use less water.
