Pumpkin S’mores Cookies

Pumpkin s’mores cookies are the perfect treat for fall camping! These make-ahead camping desserts are easy to bring on your weekend camping adventures and can be enjoyed with or without a campfire!

You can easily make pumpkin s’mores cupcakes with many of the same ingredients, too!

Pumpkin S’mores Cookies Recipe

Yields: 12-16 cookies
Prep time: 10 minutes
Bake time: 14-16 minutes

Ingredients

  • ½ cup shortening
  • ½ cup brown sugar
  • 1 egg
  • ⅓ cup pumpkin puree (NOT pumpkin pie filling)
  • 1 teaspoon Vanilla
  • 1 cup all purpose flour
  • 2 teaspoons pumpkin pie spice
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup milk chocolate chips
  • ½ cup mini marshmallows (or more!)

Directions

Step 1

Preheat the oven to 375 degrees. Line two baking sheets with parchment paper.

Step 2

In a large bowl, combine the shortening, pumpkin puree, vanilla and egg and then mix together until combined.

Then add in the dry ingredients of flour, brown sugar, pumpkin pie spice, baking soda and salt.

Step 3

Combine the wet ingredients with the dry ingredients and mix until well combined. The mixture should be a sticky consistency.

Step 4

Gently fold in half of the chocolate chips.

Step 5

Scoop out a ball of dough about the size of a golf ball and place on the parchment lined baking sheet. Top with an additional 4-5 chocolate chips and press in to stick.

Repeat the same process with the remaining dough, keeping about 2 inches between each cookie dough ball.

Step 6

Bake in the preheated oven for approximately 10-12 minutes, or until edges are slightly browned.

Step 7

Immediately top with a few mini-marshmallows and place back in the oven for an additional 2 minutes. Watch the oven closely because the marshmallows will melt if left in the oven for too long!

Step 8 (Optional)

You may use the broiler setting for an additional minute to “toast” the marshmallows and give them a golden color. Or you can use a kitchen torch to brown the marshmallows after removing from the oven.

Allow to cool on the baking tray for two minutes then transfer to a wire rack to cool completely.

How to Store: Cookies may be stored in an airtight container for up to 3 days.
