Cast Iron Skillet Chicken Fajitas

Easy skillet fajitas are always a crowd favorite! These skillet chicken fajitas can be made in a cast iron pan on your grill or over the campfire.

While the fajitas in a skillet are delicious on their own, you can also add toppings that you love, such as cheese, sour cream, guacamole or fresh squeezed lime juice.

We used spices to make a homemade fajita seasoning for the flavorful chicken, but you can use a spice packet mix if you prefer.

Easy Skillet Chicken Fajitas Recipe

Ingredients

  • 3 Boneless Skinless Chicken Breasts
  • 1 Yellow Onion
  • 1 Red Bell Pepper
  • 1 Yellow Bell Pepper
  • 1 Orange Bell Pepper
  • 1 Poblano Pepper
  • 1 teaspoon Chili Powder
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Cumin
  • 1 teaspoon Granulated Garlic
  • 1 teaspoon Salt
  • 2 tablespoon Olive Oil (optional)
  • Flour or Corn Tortillas
  • Toppings such as sour cream, guacamole, cheese, lime juice (optional)

Directions

Step 1

Preheat your skillet to medium heat and add your oil, if you use oil in your pans to fry.

Step 2

Combine all your spices in a bowl and mix well.

The coat the chicken with 3/4 of the spice mix. Save about a fourth of it for the vegetables.

Step 3

Cook the chicken for about 5-7 minutes on each side, or until the internal temp reaches 165 degrees.

Step 4

While the chicken cooks, cut the onion and all of the peppers into thin slices.

Step 5

After the chicken has cooked through, remove the chicken and place on a cutting board.

Now add the vegetables to the cast iron skillet, leaving the oils, spices and drippings in the pan. Then sprinkle the vegetables with the remaining seasoning.

Step 6

Saute the veggies until they caramelize, which will be about 10 minutes, stirring or tossing occasionally.

Step 7

While the vegetables cook, slice the chicken into thin strips.

Add the chicken back into the skillet once the vegetables are cooked to your liking, and the mix thoroughly. Remove from heat.

To serve: Heat the tortillas over a campfire, or warm up in the microwave or on the stove top. Then fill with the fajita mixture and add toppings, if desired.

Helpful Tips

  • To cook dinner even quicker, have an extra skillet handy and cook your vegetables at the same time as the chicken, just in a separate skillet.
  • Cook the chicken until it reaches the correct internal temperature. Each chicken breast will be a different thickness and therefore will fluctuate in the amount of time it should cook to reach the appropriate internal temperature.
  • The chicken vegetable fajita mixture will keep well in the freezer for up to 2 months, if sealed in an airtight container. Store in an airtight container in the fridge for up to 4 days.
