Delicious Chipotle Barbecued Chicken Skewers for the Grill
Yields: 5 servings
Ingredients
- 2 pounds boneless, skinless chicken breast, cut into 1-inch cubes
- 6 tablespoons olive oil
- 2 tablespoons honey
- 1 teaspoon garlic powder
- 1 teaspoon chipotle powder
- ½ teaspoon ground cumin
- ½ teaspoon salt
Sauce Ingredients
- 2 cups honey barbecue sauce
- 3 tablespoons honey
- 2 chipotle peppers in adobo sauce, chopped
Directions
Step 1
In a zip top gallon-size freezer bag, pour the oil, honey, garlic powder, chipotle powder, ground cumin, and salt. Seal the bag and shake to mix.
Add the chicken to the bag, turning a few times to coat. Refrigerate for 2 hours or overnight.
Step 2
In a mixing bowl, stir together the ingredients for the barbecue sauce. Refrigerate until ready to use.
Step 3
When ready to grill, prepare the grill for medium-high heat to about 350 degrees. Carefully rub the grill grates with vegetable oil.
Remove the chicken from the marinade and place the chicken cubes on metal skewers (or on wooden skewers that have been soaked in water for 20 minutes.)
Discard the remaining marinade.
Step 4
Lay the chicken skewers on the grill and cook for 12 to 15 minutes, turning halfway through the cooking time.
Coat the skewers with the barbecue sauce and continue grilling for an additional 2 to 4 minutes or until the barbecue sauce has glazed the chicken.
Step 5
Remove the chicken from the grill and allow it to rest for 5 minutes prior to serving.
Variations: Chicken breasts can be marinated whole and then cut into cubes after marinating, if desired. Chicken thighs can also be used.
